July 2014: Hainanese Chicken Rice




Ingredients: Chicken:
1 whole chicken
salt
4 inch ginger; cut into slices
3 stalks scallion
1 tbsp sesame oil

Rice:
2 cups rice; washed and soaked
2 tbsp vegetable oil
1 inch ginger
1/2 tsp sesame oil
2 cups broth from chicken
1 tsp salt

Chili Sauce:
6 red chillies; chopped
2 tbsp ginger
2 cloves garlic
1/2 tsp salt
1/2 cup lime juice

Directions:
1. Clean chicken, then pat dry.
2. Season generously with salt
3. Stuff chicken with all chicken ingredients, and boil for at least 30 minutes, or until chicken is fully cooked through
4. Remove chicken from pot and place in a bath of ice water. Reserve broth.
5. Drain rice, and cook with all the rice ingredients.
6. While rice is cooking, blend chili sauce ingredients in food processor. Cut chicken into pieces

  1. I was really impressed with the outcome. I used around 4 or 5 chicken breast for the family and followed the recipe. Was surprised how much ginger they use but it was for the right reasons. Ingredients were very convenient to find as well.

    1. Yep! all the ingredients were already there sitting in my kitchen. I think the only ingredient that I had to go out to buy was the chicken.
